What is Arancini?
Arancini are Italian rice balls that are stuffed with various fillings, then coated with breadcrumbs and fried to golden perfection. The name “Arancini” translates to "Little Oranges" because of their resemblance to the fruit. Traditionally, Arancini are tennis ball sized but Cucina Foods introduced the Mini Arancini to create the perfect snack and/or appetizer.
Why is the rice yellow?
Authentic Arancini require risotto seasoned with saffron (risotto alla Milanese), the world's most expensive and exotic spice. Saffron brings not only its signature delightful flavor, but also provides its signature yellow color to the rice.
